Green Eggs & Ham
/Green Eggs & Ham Recipe
Ingredients
- 8 ounces tomatillos, husks removed, charred on a grill
- 1 jalapeño chile, charred on grill
- 1 garlic clove
- ¼ teaspoon salt
- ½ cup olive oil
- ¼ cup onion, peeled and thinly sliced julienne style
- 6 ounces smoked ham or canadian bacon, diced or cut in strips
- nonstick cooking spray
- 4 eggs
- 4 tostadas
Preparation
- Put the tomatillo and jalapeno and salt in a blender or food processor and puree
- Heat olive oil in large skillet over medium-high heat. Add onion and cook for 3 minutes
- Add ham and cook until tender and lighlty browned
- Add tomatillo mixture and simmer 10 minutes
- Heat a small skillet over medium heat; spray with nonstick cooking spray
- Cook batches o2 2, break eggs into pan one at a time. Cook to desired firmness
- Slide egg onto Tostada and top with tomatillo and ham mixture — Serve immediately
Tostada Recipe
Ingredients
- 1 cup canola oil
- 4 corn tortillas
Preparation
Heat oil in a small skillet over medium-high heat. Fry tortillas until golden brown, about 2 minutes oneach side
Chef’s Note: For a low fat version, toast tortillas on griddle or nonstick pan until golden brown.
